The PIGMENTA-LO project was established with the aim of strengthening the competitiveness of Lombardy’s cereal farming through the development and enhancement of pigmented wheats, which feature high nutritional and functional properties. These varieties, still uncommon in commercial production, are rich in bioactive compounds such as anthocyanins and carotenoids. They are drawing growing interest from consumers and the food industry, yet require further technical, agronomic, and technological research to fully develop the supply chain.
The project aims to verify the feasibility of cultivating and processing these wheats in Lombardy, while promoting the setup of an integrated supply chain involving research, agricultural production, and industrial processing. The project focuses on optimizing processes along the production chain to enhance product quality and promote innovative, sustainable, and high-value-added crops, generating new opportunities for farms.
